For those that know me, I have been working out like crazy lately…well, maybe 4-5 days a week. I have been doing a short but very high intensity work out. I usually go to youtube for my work out and I have found some of the greatest trainers there. I also found this girl Zuzka on oh my gosh! She kicks my butt every time I do one of her workout! She is great, short workout, but very intense! I absolutely love it. You can get her DVD on Amazon.com, I promised you, you won’t be disappointed! I started right around summer time, and so far I have lost 18lbs and counting… I’m almost to my high school weight, which is super exciting for me. I had to challenge myself and of course the cravings for food were entirely hard on me. I do still eat some carbs and sometimes will have my ice cream here and there, but for the most part I usually eat a lot of protein, some carbs, fruits and vegetables. I have been crazy shopping for workout clothes too that I love to wear. I like to wear something comfortable that also makes you look sexy at the same time. One of my favorite brands is Marika. Really nice material and super comfy, I love Marika!
Yield: About 2 cup
- 2 cup chocolate chips -one bag of (dark, semisweet, milk chocolate, white, etc.)
- 4 Tbsp. coconut oil
Stir together chocolate chips and coconut oil in a small pot. Place on stove top on high for 2 minutes or so. Continue stirring in 15 second intervals until all of the chocolate is melted. Remove and let sit until the chocolate reaches room temperature.
Serve with ice cream, or cover and store at room temperature keep in a mason jar or plastic container with cap. DO not store in a refrigerator, keep it for up to 1 month. I made more as it goes fast in my house. My kids love it! Happy kids, happy Mom.
I bought some burlap at Joann‘s last week, and I’ve been wanting to make something with it… So now that October is here I went to Google to find some pictures of a cute pumpkin and I came up with this. I did not have any paint on hand that I wanted to use, so I decided to go to my children’s crayon jar and voila!
Three-Ingredient Coffee Ice Cream
Prep 10 min
Total 10 min + 4 hours or longer freezing time
I used my Blentec blender as my stand mixer broke….STIR cream with instant espresso in a large bowl (or bowl of a stand mixer).
BEAT cream, using an electric mixer on medium or blentec on pulse, until soft peaks form, 2 to 4 min. Reduce speed to low and gradually beat in condensed milk until just combined. Mixture should be smooth and fluffy.
SCRAPE mixture into a tupperware container or 9×5-in. loaf pan. Cover with lid, or a piece of waxed paper if using loaf pan. Freeze until firm, about 4 hours. Scoop and serve!

Okay, so I stumbled upon this recipe via pinterest and found this recipe from cleverlyinspired.com.. You should check out her website tons of clever ideas. My kids are very sensitive of chemicals in their food that has additives, food coloring, artificial flavors, eggs, chicken, corn, some fruits with salicylates, TBHQ, Nitrates, MSG etc.. I’m “sort of” doing the Feingold diet with them, but there are some foods in Feingold that are still sensitive for them. So what I’ve been doing is I’ve been making almost everything, did I mention “almost” from scratch… It has been a painful, tiring journey to keep them on a “healthy- chemical free diet”…But the reward is astonishing! When my kids eat anything that is listed above, they re-act, don’t listen, their attention is way off, they don’t sleep well…I mean it’s madness! I have three to put up with…This all started with my husband…He had all this symptoms at a very young age. I didn’t believe it at first and thought that’s crazy..As I got older and my husband and I had family on our own, I recognized all the signs and I went into doing something about it… I, myself hate taking meds, I certainly didn’t want them to be diagnosed with ADHD and take medications for it. Although, I’ve always been a firm believer, if you eat a healthy diet, most likely your body is healthy. So enough said…my kids loves this new recipe I just tried tonight.
Here’s the simple recipe
1/2 Cup 100% Cocoa
1 Cup sugar
1 Cup Water
1/2 tsp Vanilla
pinch of salt
In a saucepan, combine cocoa, sugar, salt and water.
bring into boil, 5-8 mins. stir it so it does not burn.
turn off, then add the Vanilla
let it cool then pour into a squeeze bottle or even mason jars.
store in fridge up to a month.
So simple, it beats the Hershey Syrups that’s loaded with Chemicals they sell at the store..Love this Recipe! Thanks to Tracie from cleverlyinspired.com
